Jerusalem Sesame Bread Ka’ak Alkuds


Ingredients for dough: 

3 cups all-purpose flour, 2 Tbs sugar, 1 Tbs yeast, 1 tsp baking powder, 1 tsp salt, 3 Tbs powdered milk, 3 Tbs vegetable oil, and 1&1/2 cups lukewarm water. For egg-wash: 1 egg and 2 Tbs milk. About 1 cup sesame seeds for topping.


To start, mix all dough ingredients in a KitchenAid mixer for 5 min. Remove the dough, and form into a ball. Rub it with oil, cover and set aside in a warm place for 1 hour until it doubles in size. When the dough has risen, turn it out onto a lightly floured work surface and divide it into eight pieces, and turn each one gently into a ball, trying not to overwork it. Cover and set aside for 10 min to rest. Dig your finger into the center of one of the balls to create a hole, then stretch the dough outward to create an oval ring. Transfer the rings to a sheet of parchment paper and cover to rest for 15 min.


Preheat the oven to 450ºF. Place baking sheet in the oven to warm up. To prepare the topping, whisk together an egg with 2 Tbs milk and set aside. Brush the top of each ring with the egg mixture then sprinkle sesame seeds on the top. Cover and set aside to rest for another 10 min. Lower the oven temp to 400ºF, place two rings on parchment paper, put onto baking sheet & then into the oven.

Bake for about 15 min until the rings are deep golden brown. Remove the rings from the oven and set aside for 10 min before serving. Enjoy
